  • दिशा-निर्देश चाय के लिए: सभी सामग्रियों को एक (अधिमानतः टोंटीदार) सॉस पैन में डालें । मध्यम आंच पर रखें. दूध की परिधि के चारों ओर छोटे बुलबुले दिखाई देने तक गर्म होने दें। दूध को जलने से बचाने के लिए, चाय को तले से खुरचते हुए हिलाएँ। जब दूध में उबाल आ जाए तो आंच बंद कर दें और अच्छी तरह हिलाएं. एक बार फिर उबाल लें, आंच बंद कर दें और अच्छी तरह हिलाएं। कुछ मिनट तक ऐसे ही रहने दें। सावधानी से छानकर एक कप में डालें और परोसें।

  • Add all of the spices to a spice grinder and grind. To Make Chai:
  • Add water and chai masala to a pot, and bring it to a boil.
  • Add loose black tea and let it boil for 3 minutes.
  • Add milk and bring to a full rolling boil (until you like the color of the chai), then turn off the heat.
  • Strain into teacups.
  • Add sugar to the teacups and stir.

Different Technique for Making Vegan Chai -

    Ingredients To make a basic chai, we always need 4 basic ingredients- water, milk (dairy or non-dairy in this case), sugar and tea leaves. Spices are added when we make masala chai.
  • Loose tea leaves: to make Indian chai, you do need loose Indian black tea leaves. You can easily find them at Indian grocery stores. There are so many brands and everyone has a personal preference. I like “society” brand.
  • Cashew milk: you need unsweetened cashew milk for this recipe and my absolute favorite is “forager” brand unsweetened cashew milk (not sponsored but I seriously love it).
  • Spices: to make masala chai you need spices like green cardamom, cloves, peppercorns. There’s some ginger as well.
  • Sugar: this is optional and you or may not use it. You can use white sugar, raw sugar, jaggery or whatever you prefer as a sweetener.
  • Step by Step Instructions

  • Crush the cardamom, peppercorn slightly using a mortar and pestle. Add water to a pan and then add the grated ginger, cloves, crushed cardamom and peppercorn. Let it come to a boil on medium heat. Once it comes to a boil (it takes few minutes to come to a boil) then let it boil for 1 more minute. The color of the water will change at this point as all the spices seep through it.
  • Add the loose tea leaves and let it boil for 1 more minute. Meanwhile heat cashew milk in another pan or using a steamer. You don’t need to boil it, just heat it up.
  • After 1 minute, remove the pan from heat and strain the chai into a cup using a strainer.
  • Also strain the hot cashew milk through the same strainer. Now, add sugar to taste, stir well and serve hot! Serve this vegan masala chai with crispy cookies (we call then biscuits in India) like these jaggery cookies.

    Ingredients:

  • 2 cups of water
  • 2 cups of milk
  • 4-5 black tea bags or 2 tablespoons of loose black tea leaves
  • 4-5 green cardamom pods, lightly crushed

  • 4-5 whole cloves
  • 1-inch piece of fresh ginger, sliced
  • 2-3 tablespoons of sugar (adjust to taste)
  • Optional: a pinch of black peppercorns or a few slices of star anise for added flavor
  • Instructions:

  • In a saucepan, bring the water to a boil.
  • Once the water is boiling, add the black tea bags or loose black tea leaves, crushed cardamom pods, cinnamon stick, cloves, ginger slices, and any optional spices.
  • Let the mixture simmer for about 5 minutes, allowing the spices to infuse into the water.
  • Add the milk and sugar to the saucepan. Stir well.
  • Let the chai simmer for another 5-7 minutes, stirring occasionally to prevent sticking and to ensure even flavor distribution.
  • Once the chai is heated through and infused with all the flavors, remove it from the heat.
  • Strain the chai through a fine mesh sieve or cheesecloth to remove the spices and tea leaves.
  • Serve hot and enjoy your homemade chai!

  • Heat water in a saucepan over medium-high heat. Once the water comes to a boil, reduce the heat to low. Add ginger and lemongrass leaves to it and let it simmer for 2-3 minutes.   • Take two to three tea spoons of good quality Assam tea BP or higher grade is always better Blend it with 1 big Cardamom, 2 to 3 Cloves, 1 small piece cinnamon, 1 star anise, 2 to three black pepper and a small piece dry ginger (all Slightly crusher) mix the tea and spices
  • Now bring one and a half cup of water to a boil, the milk also should be in a boil simultaneously, the milk should be thick for good taste, now add two teaspoons of the prepared masala tea to the boiling water and allow it to simmer for about 1.5 to 2 minutes
  • In a tea cup add one tea spoon full cane sugar Now strain required amount of tea liquor in to that cup, top it up with boiling milk mix the sugar

I love my tea to be as simple..

    Boil 1 cup of milk, 1/4 cup water, 1tsp sugar and 1 tsp tea leaves..simmer till color darkens a bit..strain and enjoy . Thats it.. Iove having ginger tea during cold weathers.

Once it starts boiling add 1/2 cup of milk and 1tsp sugar bring to a boil and then simmer for about a minute. Your aromatic masala tea is ready. Enjoy.

Amritsari Badi Elaichi chai (for Winters)

  • For 2 cups of Chai
  • Add 1 cup water and 1/3 black cardamom seeds crushed with some portion of the cover as well ( don't take whole ). Let it brew for sometime
  • Add sugar/jaggery powder as per your taste (this tea tastes better when sweet)
  • Add 1 cup milk and let it boil for a little time.

Ginger Lemongrass tea (for summers)

  • For 2 cups of Chai -
  • 1. Take 1 cup water and put to boil.
  • Crush together 1/2 inch ginger with one whole lemongrass leaf . Add this to the water and let it brew for 2 mins.
  • Add 1 cup milk.
  • Sugar is optional. You can add 2 tsps Jaggery powder (if you want) . It tastes great with it.
  • Let it boil a little and strain.
  • Sip your super refreshing cup in summers!!!

INDIAN MASALA CHAI METHOD -

    Add the whole spices to a mortar and crush them lightly into smaller pieces. In a small saucepan on high heat, pour in the water and add the spices. Bring the water to a boil and add the tea bags or leaves. Lower the heat to a medium to low setting and simmer for two minutes, or until the tea leaves and spices have released flavor and color. Then, pour in the milk. Method one - Double Boil: Bring the chai to a boil on high heat, so that it starts aerating and bubbling to the top. Remove the pot from heat until the bubbles come down. Replace the pot on the burner and bring the chai back up again to a boil and remove from heat a second time until the bubbles go back down. Method two - Pulling Chai Alternatively, use a small cup with a handle or ladle to scoop some of the chai and "pull" it while it’s simmering. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times until the chai is bubbly. Continue to simmer the chai until desired consistency and color, about 5-7 minutes. Some of the liquid will have evaporated by now, so the chai will be smooth and creamy. Remove the saucepan from heat. Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the sugar according to taste, and serve hot.

Here's my simple recipe for making delicious chai:

  • In a saucepan, combine water, ginger, cardamom pods, cloves, and cinnamon stick. Bring to a boil and let it simmer for 5 minutes to infuse the flavors.
  • Add loose black tea leaves and simmer for another 5 minutes.
  • Pour in milk and sugar, stirring well.
  • Let the chai simmer for a few more minutes until it reaches your desired strength and sweetness.
  • Strain the chai into cups and serve hot.
  • Feel free to adjust the spices and sweetness according to your preference. Enjoy your homemade chai!

CINNAMON AND PEPPER CHAI

  • boil milk (can add water if you don't like the thick consistency of milk) adding the chai patti of your choice .
  • Add one cinnamon stick And black pepper corns.
  • add sugar as per your taste and stir, strain when the color of the tea satisfies you.
  • Tada!!! Your garam garam chai is ready.
  • Remember, the purpose of this chai is to enhance the spicyness of the pepper with a hint of cinnamon aroma. It is best for those who are suffering from sore throat. Thank you !
